It's March and that means Corned Beef season is upon us! Make sure to get yours while supplies last at your local grocer or by clicking here. Put on your green apron, pour yourself a nice stout and get cooking! Vienna Beef is the Official Corned Beef of Saint Patrick’s Day!
Irish Whisky Glazed Corned Beef (Serves Approx. 4 People)
- 1 Pack of Vienna® Retail Corned Beef Approximate Weight 3 lbs.
- Irish Whiskey
- 8 oz. Orange Marmalade (or use Brown Sugar)
- 6 oz. Country Dijon Mustard
You will need:
- Mixing Bowl
- Shallow Baking Pan
- Aluminum Foil
- Serving Dishes
Here’s what you’ll do:
Step 1. Preheat Oven to 350ºF
If corned beef comes with pickling spice rinse off if you prefer and pat dry. Place corned beef in a shallow baking pan add 2 cups of water to the pan and cover with aluminum foil. Set preheated 350ºF oven and bake covered for approximately 3.5 hours You may need to add additional water half way so as not to burn the meat.
Step 2. Mix Glaze
In a mixing bowl mix the Irish Whiskey, Orange Marmalade, and Country Dijon mustard.
Step 3. Top Roast with Glaze
Take aluminum foil off and spoon the glaze on the corned beef and add an additional cup of water so the glaze does not burn up in the pan, leave uncovered and bake additionally 30 minutes basting with the juice reserved in the pan to obtain a nice glaze. This method of cooking can take a little longer to cook depending on the meat to get the desired tenderness. You can crank the heat up to create steam and boiling effect, but you will need to watch that the water does not dry up and burn the meat on the bottom. Add sautéed spinach and all remaining ingredients to hot soup and mix well.
Step 4. Serve & Enjoy!
Slice and serve with Cabbage, Parsley Boiled Potatoes, Carrots, Celery, and Onion.
Grilled Vienna® Corned Beef Reuben (Makes 1 Sandwich)
- 2 oz Thousand Island Dressing
- 1 tablespoon butter
- 2 Slices Marble Rye Bread
- 2 Slices of Swiss Cheese
- 6 oz thin-sliced Vienna® Corned Beef
- 4 oz Vienna® Sauerkraut
- Vienna® Deli Pickle Spear
You will need:
- Sauté or grill pan
- Spatula
- Serving plate
Here’s what you’ll do:
Step 1. Cook Vienna® Corned Beef as instructed on package
Cool and slice for sandwiches. (This should be done in advance to accommodate cook time).
Step 2. Prepare Sandwich
Spread butter on one side of each slice of marble rye bread and grill with butter side facing grill. Cook until brown. While grilling bread, place 1 slice of Swiss cheese on each piece of Marble Rye Bread. Warm Vienna® Sauerkraut and cooked sliced Vienna® Corned Beef on the grill. Spread Thousand Island Dressing evenly on top of Swiss Cheese on both pieces of bread. Squeeze excess Vienna® Sauerkraut juice on to Vienna® Corned Beef while cooking.
Step 3. Assemble Sandwich
Stack Vienna® Corned Beef on top of warm Thousand Island Dressing and top sandwich with a final slice of bread.
Step 4. Serve & Enjoy!
Cut diagonally and serve sandwich warm with Vienna® Deli Pickle Spear.
