It’s spring time, Salami lovers! The days are getting longer, weather is warmer, and baseball season is underway. Our all-beef Salami is curated with a blend of lean meat, beef brisket trimmings, zesty spices, and our famous hardwood hickory smoking. The smoky, garlic flavor is always a crowd favorite. The only thing that could make it better is, yes you guessed it, a few show stopping spring recipes featuring our Vienna Beef Soft Salami. 
Pasta Salad
Prepare for a dish even the pickiest of eaters can’t pass up on the picnic buffet. Don’t feel guilty about scooping mounds of pasta salad onto your dish–we promise no one is looking. Carb loads are in season and your paper plate can definitely handle this. 
Recipe

  • One box of Rotini Pasta
  • 1 1/2 cups Vienna Beef Hard Salami, cubed
  • 3 cups Grape Tomatoes, halved
  • 1 can Black Olives, sliced
  • 2 cups chopped Bell Peppers 
  • 1/2 cup chopped Red Onion
  • 1 1/2 cup fresh Mozzarella Pearls
  • ¾ cup. freshly grated Parmesan
  • 1/2 cup chopped fresh Parsley
  • 1/3 cup chopped fresh Basil
  • 1 1/4 cup of your favorite Italian Dressing

Cook pasta according to the directions on the package. Strain and set aside to cool. Chop ingredients and place into a large bowl. Toss all ingredients together in bowl with dressing. Can be served immediately or chilled for 1-2 hours for a colder, more refreshing pasta salad. Store up to 3 days. 

Cheese and Salami Skewers
Yes, finger foods are always in season, which strengthens our claim that when you drop a platter of these on the coffee table, it’s a sure fire crowd pleaser. One might say these snacks channel “charcuterie board on-the-go.” The best part about these treats is that flavor combinations are endless. Starting with Vienna Beef Soft Salami, you can add your favorite cheese and olive combo, spice it up with a bit of basil, and even pop a cherry tomato on the end for good measure. We like to stick with the basics. 
Recipe 

  • 20 evenly sliced cubes of Vienna Beef Soft Salami
  • 20 cubes of Sharp Cheddar Cheese
  • 20 Green Olives
  • 20 wooden skewers

Skewer one cube of Vienna Beef Soft Salami, one Cheese Cube, and one Olive on each wooden skewer. Enjoy. 
Easter Quiche
Entertaining guests can be hard. Preparing brunch shouldn’t be. This springtime favorite can be whipped up all in one dish and feed plenty. 
Recipe

  • 2 Premade Pie Crusts
  • 9 Large Eggs, whisked
  • 6 oz Prosciutto cut into ½ inch pieces
  • 4 oz Vienna Beef Soft Salami cut into ½ inch pieces
  • 8 oz fresh Mozzarella cut into ½ inch pieces
  • Black Pepper to taste

Preheat the oven to 350 degrees. Line greased 8x8 baking dish with one of the Pie Crusts. Add chopped meats and cheese to the dish. Sprinkle Parmesan Cheese and Black Pepper on top. Reserve 2 TBS of whisked Eggs for Egg wash. Add remaining Eggs to the dish. Place the second Pie Crust on top and seal the edges. Brush with Egg Wash. Bake for 55 min. Let rest for 15 min. Serve and enjoy.
